Best fruit salad ever:
Bag of frozen mango slices Blueberries Pomegranate seeds (just get a whole one, cut it in half and wack out the seeds) squeeze of lime frozen mangos keeps it cold. You can also add some sunflower seeds on the side. You won't be able to stop eating this salad-and I usually hate fruit salad because of everything mixing together. |
Broccoli Salad always a hit. This is my mom recipe, but you can find variations on AllRecipe
2 heads of broccoli, chopped 1c mayo 2 tbs vinegar 1/4 c sugar 1 lb bacon, cooked & chopped 1 med onion, chopped 1 c salted cashew, added shortly before serving Mix all together. Don't die from the goodness. |
Spinach Dorito Casserole.
Cool Ranch Doritos, shredded chicken, spinach, sour cream, cream of chicken soup, green onions, white onions, minced jalapenios, lots of shredded Monterey jack cheese, and of course, butter. Never any left to bring home. I would share the recipe, but this is DCUM, and of course any recipe with Doritos and cream of chicken soup is the devil's food ![]() |
Artichoke dip
Can of artichoke hearts, chopped 1 cup mayo 1/2 cup grated parm 2 cloves garlic Mix it all together and bake in dish at 325 for 40 min or until golden on top. Enjoy with entertainer crackers or whatever strikes your fancy. |

Nope, that's the part that you eat. The red teardrop shaped seeds. |
For holiday potlucks I often do green bean salad with pomegranite seeds. Its festive. I also tend to do broccoli salad, black beans and rice, vegetable fried rice, or fruit for the kids. |

This has made it to several potlucks and is very popular. I make it without the beef and add a little more broccoli. The cilantro and bean sprouts are optional (when I have them, they go in):

I like it because the dressing is not mayonnaise based and can sit out without refrigeration for longer than a mayo-based dressing can. |

I use halved grape tomatoes instead of diced plum tomatoes, just because it's a lot easier. And I do take the time to remove the husks from the garbanzo beans. A PITA, but worth it IMO. |
