Oh, you've only had bad rugelachs, and you've never had a rugelach I made. Mine have a cream-cheese-and-butter dough that I roll up with the filling and that bakes up tender, flaky, and moist inside (the secret is high heat so that you brown quickly outside but don't dry out the inside), and I make various fruit flavors as well as a chocolate one. |

Mexican wedding cookies are very easy, if you have a standing mixer. I buy the nuts already ground at Trader Joe's. (I use almonds instead of pecans but either is fine!)

Sorry but I have had everything from homemade to store bought. They just aren't good - and they are always dry. Even cream-cheese and butter recipes. I have never, ever seen anyone finish these off at a party or cookie exchange - they are definitely an unpopular cookie choice. |

For easy and fast, and 5 dozen, how about oatmeal chocolate no bake cookies? They are delish, and you basically just stir up about 5 ingredients in a pot on your stove, then drop them by teaspoonfuls onto wax paper and let them set.
The trick is to dissolve the sugar completely so they aren't gritty (remember, they are no bake!). Tons of recipes for them can be found googling online, with or without peanut butter. |

| If you need to make a lot of cookies, buy a cookie press for $10 and make snowflakes, or Christmas trees. You can fit two dozen on a sheet and they're fast. Putting the cookie sheets in the freezer first helps the dough stick. |

Chocolate Meringue Cookies
Ingredients 3 egg whites 1/8 teaspoon cream of tartar 1/2 teaspoon vanilla extract 2/3 cup white sugar 1 tablespoon unsweetened cocoa powder 1/3 cup semisweet chocolate chips Directions Preheat oven to 300 degrees F (150 degrees C). Combine egg whites, cream of tartar, and vanilla. Beat until the whites form soft peaks. Slowly add sugar; beat until stiff peaks form, and mixture becomes glossy. Fold in cocoa and chocolate chips. Drop mixture by teaspoonfuls on to a greased cookie sheet.
