Recipe for a quick healthy commuter breakfast

Egg sandwich
Overnight oats
Fruit and yogurt
Smoothie
Protein bar
Breakfast burrito

- Yogurt, topped by berries, seeds and nuts, date puree, 2 tsp of cooked oats, chopped banana. Make ahead for several days.

- Boiled egg sandwich. Make ahead. You can also press it in an electric sandwich maker and make a closed and toasted sandwich.

- Sauteed Veggi and cheese sandwich. Make ahead in a sandwich maker.

- Make bars or balls out of roasted and crushed powdered seeds and nuts (almonds, walnuts, pistachio, sesame, pumpkin seeds, melon seeds, sunflower seeds) mixed with pureed dates. An amazing nutritious energy bar. Can be made ahead and kept in fridge for a long time.

If I need super quick I have an Rx AM bar and a banana. The AM bars contain oats so are not chewy bricks like the regular Rx bars.

I also like microwaveable egg bites - my favorite are the Costco ones.

Sometimes I also just have nuts, cheese and blueberries.

I do a lot of hard boiled eggs. I'm buying them pre-peeled for ease. I can take these with me.

If I have a few minutes, I mix Barely Elizabeth's Keto Friendly granola (not all of them are Keto Friendly. Oats and Almond butter) with protein trail mix (raw walnuts, pecans, pumpkin seeds, dried cranberries, raw cashews). A scoop of Greek yogurt. Pour some milk in, stir it up. If I have fresh strawberries or blueberries on hand even better. This stays with me longer than regular oatmeal. Super easy and fast.

Another vote for egg bites. So many different options there. So good and easy.

This. I wouldn’t eat in your car. Especially something like hard boiled eggs. Gross.

Just lack a breakfast to eat when you get to work. Egg bites are a good suggestions and make a weeks worth per batch. Add a banana, bowl of berries, maybe some overnight oats, or container of yogurt.

Same here.

But, I’d prefer to eat breakfast at home or at work vs the car. I splurge on individual microwavable oats containers to keep at the office (I’ll add dried fruit), and at home I’d scramble eggs with a piece of wheat toast (this literally takes me 2 minutes to make).

Meal prep:

Egg bites or quiche
Yogurt with add ins
Bagel with peanut butter
Cheese, lunch meat, nuts and berries
Hard boiled eggs
Cereal, milk and a banana

I make these except instead of doing the frosting I dip or top them with Siggis coconut yogurt in the vanilla cinnamon flavor. I don't think you can eat it in the car, but I pack it in tupperware and eat it at my desk. You can change it up, I use pistachios instead of walnuts and add in half sugar craisins. Last time I got lazy and used the shredded carrots in the bag. They left an odd taste, so I wished I had taken the time to shred the carrots. Don't be like me. Be better than me
