I need a Thanksgiving main/side for vegetarian

I love that one, my family does too. Quick and simple. I change out the cheese for one kid. I do other ones too but that’s so quick.

That looks really good.

I have trouble finding broccolini - which I prefer to broccoli, especially for special dinners

What don’t you understand? Macaroni and cheese is a great main dish, lots of protein. I make a great macaroni and cheese that one of my adult kids requests whenever he’s in town- says it’s his favorite.

I’ve never really understood why macaroni and cheese is listed sometimes as a side dish, it doesn’t make sense to me. I think of side dishes as consisting of mainly vegetables.

I suspect you have never had good macaroni and cheese. I bet you think all macaroni and cheese is made with a powder that turns into and orange liquid-y “cheese.”

Interesting. Have you never had lasagna or ravioli or fettuccini Alfredo as main dishes? They all have very similar ingredients as macaroni and cheese and are very typically served as main dishes, not as side dishes.

I agree with the macaroni and cheese suggestion. We always have that at Thanksgiving.

But as an alternative, I've made this Sartu di Riso as a vegetarian main dish for a party and it's fabulous. But, more work than mac and cheese

Thanks for this — these places are not in my usual circuit. And probably why I don’t regularly see broccolini.

You must be very fancy, because lots of families have mac and cheese (not the boxed kind) as the main with a side of vegetables. This won't work for OP's vegetarian but if you want to try a fancy mac and cheese order or make lobster mac and cheese. They are on the menu at most restaurants in our beach town.

Couple of suggestions:
1) Make a gratin of thinly sliced zucchini, onions, and yellow and red cherry tomatoes. Just toss the vegetables with salt, pepper, a spoonful of flour in a bowl, drizzle olive oil on top, then bake in a ceramic or glass pan until the vegetables are soft. You could put some breadcumbs mixed with parmesan cheese on top and broil for a few minutes to get a nice crusty top.
2) Buy a couple of bunches of haricot verts (the very skinny sting beans). Cut off the brown end and cook in boiling water until just tender. For the dressing, thinly slice a handful of shallots, put them in a glass bowl, cover in olive oil, and microwave until the shallots are soft. Toss with cooked haricots verts. Salt generously.

Lots of cheese isn’t vegetarian, has rennet in it. Check labels.
