Freeze it. When I get a ham for Christmas, I use the hambone to season the collard greens and the black eye peas that I make for New Year’s Eve.
Most of the have already been mentioned, but: ham sandwiches, ham biscuits, ham and cheese biscuits (I often make cheese biscuits for Christmas breakfast), lentil soup with ham, grilled ham and cheese sandwiches, Cuban sandwiches, omelets.

Too late for this, you needed to have portioned out some to freeze on day 1 or 2, not day 5/6. Unfortunately I just discarded a bunch of turkey because I didn’t think ahead to do this, and we were tired of eating it.

We always order an extra big HBH in order to have lots of leftovers! In addition to a ham and bean soup and split pea soup (makes both wonderful and not sweet), I also dice some up and put them in the oven atop brussel sprouts, which I then roast - yummy! Put enough slices in small ziplock for a sandwhich and make ham sandwiches in the future, when you haven't had it in a while.

eff off. I would not toss perfectly good ham that already died. Eat the meat.

The risotto is great with a sweeter ham- add dry white wine.

Also whoever said hash is right on it.

Slice it off the bone and freeze it in portions. Use the large slices for ham. Use the smaller slices for omelets, soup, beans. Use the bone for soup, stew, beans.

And it’s fine to do it today - it isn’t too late.
