It’s in season. I’m literally getting some from my yard every other day.

Just cooking for a few people.

deviled eggs
marinated chicken thighs (and I know people will find that appalling but it's the crowd pleasing option for this group)
mashed potatoes
brussels sprouts (store was out of asparagus)
carrot slaw

Smitten kitchen lemon meringue bars

We just had brunch with my dh and 2 young kids, so super simple:

Frittata with artichokes, tomatoes, goat cheese
Challah French toast
Fresh fruit

Lemon meringue pie for dessert

My son and I were traveling and didn’t get home until midday today but I managed ham, roasted sweet potato, roasted asparagus, rolls, and homemade applesauce (from my freezer). I splurged and bought half a strawberry rhubarb pie from Whole Foods but way too full to eat that tonight. It will be an Easter leftover feature this week.

Plant in the early spring, March even. It comes back each year and takes a few years to get established. You’ll see it every spring (sometimes in the fall if you’re lucky), but it’s really thin while it’s getting established. It’s one of the few perennial vegetables that get better each year.
