What vegetarian main dish are you serving for Thanksgiving?

MW poster here - so glad you are trying it! I rarely like stuffed mushrooms but this dish is in a different galaxy. So good!

Last year we did Butternut Squash lasagna and a wild mushroom
Lasagna. This year we are doing Indian food for the whole meal.

Finished the filling and working on the onions. Easy but slow going. The mushroom filling is very good but not mind blowing. The walnuts add a nice and needed texture. I feel like there's another texture missing but maybe that's what the puff pastry does for it. And making the filling in advance might help the favors come together a bit more. I opted against the sauce but do think now that it might need a gravy.

Oh, and we'll see how it comes together, but I maybe should have considered doubling the caramelized onions, which I generally love.

I disagree.

Vegetarians deserve as much thought for their meal as meat eaters. My eldest (now an adult) is a vegetarian since early childhood. When she hosts, there’s a clear main and complementary sides, just as you would plan for an omnivore’s meal.


What I actually love about eating meat is that the main dish doesn't have to take a lot of thought. Roasting a chicken (I don't do turkey) is much easier than any vegetarian main I've ever made. When I was a vegetarian I did a lot of one-pan dinners.

Yup. I'm the one currently making the wellington. I've been standing in the kitchen for an hour and a half and only now finishing the components. Will still have to assemble on Thursday. No one stands over the turkey for that long!

Bake a fake meat loaf till browned with 6 cups special k cereal, 1 large size small curd cottage cheese (not low fat), fried pecans, fried celery and onion, and 2-3 eggs. Adding a cup of cooked black rice might be good too. Needs a seasoning packet like Lipton soup mix. McCormick Meatloaf mix is great, but might have beef bullion in it. Best if let sit a bit so it firms a little.
