It’s all layered and topped with pine nuts fried in ghee. A bit laborious but absolutely delicious.

I love chicken fatteh - one of my fav all-time meals. Have you seen any good online recipes for it?

Yes! I use this woman's recipe and it's the best I've seen in both Arabic and English.

There’s a zucchini tuna one from Joshua Macfadden that is pretty good.

I agree, they are a ton of work and a lot of dirty dishes, BUT they also are less expensive because they stretch the protein. You can make 2-3 casseroles with a rotisserie chicken, for example.

I made this old "Cooking Light" recipe a few times. It was tasty... maybe a little too much work

Unfortunately, the inexpensive ways to stretch the protein probably aren't going to meet OP's definition of healthy, whatever that is. Subs like quinoa for white rice, or real cheese for canned soup, or adding lots of fresh veggies all increase the price.

Maybe you're looking at the wrong type of casseroles.

I'm afraid to ask - what is golden mushroom soup?

It’s…golden mushroom soup.

Something too highbrow for my family growing up, apparently, since I only learned about it in adulthood.

If you make Unstuffed Pepper casserole with ground turkey and half/none of the cheese, it’s relatively healthy.

This is very good

Thanks for sharing this! I've been wanting to find a casserole that's similar to the Amy's frozen Chile Relleno bowl and this looks like a good starting point.

It’s delicious! My Mom (and now I) use it instead of ketchup on meatloaf.
Make a meatloaf and put into meatloaf pan, put bacon strips on top, dump a can of undiluted Golden Mushroom soup around it, add drained can of mushrooms (optional). Cool as usual. But pull out the meatloaf to slice. Serve with rice or mashed potatoes and green beans, cover with Golden mushroom gravy.

Damn, I’m craving meatloaf now.

Is it like the canned cream of mushroom soup?

I’ve never heard it it before.

Those are two totally different soups.

Cream of mushroom is cream based. It's white.

Golden mushroom is broth based, with some tomato, it's more the color of broth.
