[/quote] I agree, they are a ton of work and a lot of dirty dishes, BUT they also are less expensive because they stretch the protein. You can make 2-3 casseroles with a rotisserie chicken, for example.[/quote] Unfortunately, the inexpensive ways to stretch the protein probably aren't going to meet OP's definition of healthy, whatever that is. Subs like quinoa for white rice, or real cheese for canned soup, or adding lots of fresh veggies all increase the price. [/quote]
