Is there such a thing g as a healthy casserole? Please share recipes

+1. Bechamel is the answer, and takes about 5 minutes. (I don't use broth -- I just use butter, flour, and then reduced fat milk -- it thickens up like cream of mushroom soup very quickly). Depending on what else is going in the casserole, you can then season it with salt, garlic power, etc. I made a casserole last week that was sort of a lasagna, but it was based on what I head -- sauteed ground chicken with onion, garlic, salt, pepper, ground carrots, and chopped spinach; add in a bunch of bechamel and grated fontina and grated parmesan; layered with lasagna noodles. I think the trick with anything casserole-ish is not to go too light on the sauce. I went too light, and it was not as creamy as I had hoped.

One healthy thing about casseroles is that you can throw a bunch of chopped veggies in there and no one really notices. My son complains about cooked carrots, which is why I ground them in the miniprep -- he didn't even notice they were there.

Now I want to make a tuna noodle casserole.

I recently sauteed a whole big bag of fresh spinach, a whole orange pepper chopped, a bunch of chopped onion, a bunch of fresh mushrooms chopped, garlic pepper, and put it all in a baking dish, poured in about eight whipped up eggs with some fat free milk, added some grated cheddar and parmesan on top and I guess it was more of a veggie egg bake but everybody loved it for dinner. I have also made it with little cubes of spam on top but not everyone will like that.

Chicken fatteh. It’s a delicious Arabic dish that involves fried pita bread chips, shredded chicken (i braise mine unlike other Arabs who boil), yogurt stirred with garlic lemon juice and tahini, and white rice. It’s all layered and topped with pine nuts fried in ghee. A bit laborious but absolutely delicious.

I don’t think so..even the casseroles that don’t use canned stuff are still full of butter, cream, and cheese

I love chicken fatteh - one of my fav all-time meals. Have you seen any good online recipes for it?

I guess it’s not the healthiest thing in the world but gets my kids to eat a ton of veggies
I just started making something very similar. Cept I use a shredded rotisserie chicken. It’s good as far as protein and veggies but probably a high salt and fat content.
