Is there such a thing g as a healthy casserole? Please share recipes

Something too highbrow for my family growing up, apparently, since I only learned about it in adulthood.


Is it like the canned cream of mushroom soup?

I’ve never heard it it before.


It’s still a Campbell’s soup, but it’s different than cream of mushroom. I couldn’t tell you what the difference is, but it’s different 🤔

It’s not cream based. (Or “cream” based; I don’t think “cream of x” soup should be called cream based when it’s halfway down the list of ingredients: Water, Mushrooms, Vegetable Oil (Corn, Canola, And/Or Soybean), Modified Cornstarch, Wheat Flour, Salt, Cream, Whey, Soy Protein Concentrate, Monosodium Glutamate, Yeast Extract, Dried Garlic, Natural Flavoring. Contains: Wheat, Milk, Soy“).

I think there have been similar responses, but I do a bigger version of this--I add lots of mushrooms and sautéed peppers, and sometimes artichoke hearts--whatever I have on hand--and bake in a 9x13 inch dish. Once when I had a giant zucchini from my neighbor's garden I used that instead of the spaghetti squash.

My go to casserole happens when I have leftover chicken and rice. I sauté whatever veggies are around and mix with the rice and chickens. Then I make a quick roux and cheese sauce with whatever cheese I have and add any spices I feel like. It’s always a welcomed warm, comforting meal and good, quick use of leftovers.
