This thread reminds me of a mom I babysat for in Georgetown when I was in college. The lady was AMAZED at having discovered string cheese. She was like "have you ever heard of this low-moisture mozzarella cheese that comes in like individual packets?"

For sauce, I use my homemade red sauce, so I’ll make meatballs with red sauce on day and then use the leftover sauce for pizza later in the week. I like the Roberta’s recipe but the TJ dough in a bag is actually pretty good if you let it come to room temp before stretching it.
Good cheese is key — including fresh grated parm with the mozzarella. |

Ledo’s is literally the worst chain pizza. It’s like a kid came up with the specs: overly sweet sauce, think cracker crust and a disgusting cheese blend. |

And the real Napoli is decidedly very unwoke. Italy is not a woke country - at all. Thankfully. But I know where OP is coming from. When you've had very good pizza, the everyday pizza can be heavy and greasy by comparison. I rarely have the typical delivered pizza but we do get frozen pizzas from Wegmans which are quite decent, but the real pizzas in Naples...ah! What wouldn't I give for a proper Neapolitan pie! |
