The person who said "less than 30 minutes" did not understand the assignment IMO.

Let's see...

My kid is an adventurous eater but also says her favorite meal is "taco bowls," which is:

-Warmed up shredded chicken or pork I made some other time in the instant pot or slow cooker-- even shredding a rotisserie chicken would take longer-- or microwaved meatless crumbles with some seasoning or something-- Active time-- 1 minute

-Rice made in the Instant Pot-- Active time-- 2 minutes

-Refried or rinsed black beans (plus a sprinkle of seasoning) in the microwave-- 1 minute

-Frozen corn microwaved with some butter and Badia Completa-- 1 minute

-Fetched from fridge or pantry: Guacamole, shredded cheese, sour cream (if we have it), salsa, tortilla chips, jarred jalapeno slices, etc.

Even fetching and exchanging things in the microwave this takes like 10 minutes to get on the table (if I start the rice earlier or had some pre-cooked) and everyone loves it.

I also shared this "recipe" earlier and I think I left something out of my friend's recipe, but it's basically...

Orzo/Chick Peas/Goat Cheese Thing:

You need:

Orzo or very small pasta, but you can actually use whatever.
Baby spinach or regular spinach
Canned chick peas
Goat cheese (preferably crumbled)

Olive oil
Seasonings of your choice

Cook orzo on stove.

When it's almost done (maybe 1-2 minutes left), throw in baby spinach and rinsed/drained chick peas. (This might add 1 minute to your cook time for the orzo since you cooled down the water with the extra ingredients.)

Drain and mix back in the pot with some olive oil or butter to taste, mix in an herb blend you like-- like Badia Complete, or some herb mixture like Herbs de Provence or something-- some herby, maybe garlicky mixture with salt and pepper is good. Rosemary goes good with goat cheese, but so do lots of things.

Mix in goat cheese (chevre)-- it doesn't have to be crumbled, but that's easier to work with IMO.

Done.

The active time here is like 5 minutes. There's not even any chopping. Most is heating up water and letting the pasta cook. It's vegetarian, healthy and pretty cheap.

Pasta with frozen meatballs and sauce or pesto/spinach or broccoli on the side
Grilled tilapia with frozen brown rice and some veggies
Tortellini or ravioli with pesto or sauce, roasted asparagus
Stirfry veggies (whatever I have) over soba noodles
Baked salmon with some honey/soy/orange (or grilled), steamed green beans, rice

Some great ideas here! This is how we eat most nights, but kids are 3 and 6 and we both work full time so if dinner takes more than 30 minutes it isn’t happening.

We burned out on frozen salmon a while ago but a few of these recipes make me want to try it again.

A quick go to for us is tacos - ground chicken with taco seasoning - we have a large jar of seasoning mix my DH puts together - cooks in 10 minutes, and I put together a plate of whatever we have that might serve as a topping and soft corn tortillas. Sometimes we have time and ingredients and info for “rainbow” toppings. Other times it’s cheese and salsa. And fruit. I have a picky eater so we always have fruit with dinner so she has something to eat.

When the kids were younger, we always had chicken nuggets and meatballs in the freezer. So, pasta with Rao's sauce and meatballs and whatever veggies we had in the house (carrots to dip in hummus, steamed broccoli), or chicken nuggets with variety of dipling sauces plus a veggie.

Also breakfast for dinner (frozen waffles or pancakes with scrambled eggs), or like what many others have said, quesadillas (you can make those in about 2 minutes).

Now that kids are older (teens), I can make and they will eat Sloppy Joes or Eggroll in a Bowl (my new favorite), or, grill up burgers (veggie or meat, I buy a sleeve of burgers at Costco and keep in the freezer).

Also apple chicken sausage- cooks up quickly

Migas- scramble eggs with left over fried tortillas- add salsa.

Cheese, crackers, salami, olives, carrots, radish- tapas style

For the truly bad nights I always keep a Boston Market frozen meal.

While that is cooking, prep a simple veggie (green beans, frozen peas, etc)
Healthy dinner on the table in under 30 minutes.

Tortellini cooks in 4 minutes. Drain it and put some pesto sauce, or tomato sauce and very often just plain.


I add a frozen veg or cut fruit. We have tortellini once a week on whatever the busiest night is. Everyone is happy.
