Some of you have much higher standards….
Typical desperation-but-no-guilt meals in our house include

Scrambled eggs, toast, sliced fruit
Canned refried beans and shredded cheese on a tortilla, fruit
Cheese and crackers and fruit (bonus: sausage, edamame)
Any leftover shoved inside a tortilla, fruit

Basically the inclusion of a sliced apple is the things that moves me from “may as well get takeout” to “I’m not a complete failure.”

One of these meals generally happen once a week.

My family and guests love this. It is semi-homemade -

Frozen Yakatori (rice with chicken) packets from Costco - 1 per person. Take it out from the plastic packet and cook it in a huge glass bowl in the microwave. Add to hot rice, the veggies below and mix well. The veggies should be double the amount of the yakatori rice and it will also wilt some with the heat. -
- Finely chiffoned baby spinach
- Finely shredded carrots
- Finely sliced green onions
- One or two roasted shisido pepper
- Some finely sliced cilantro leaves
- 2-3 very finely sliced fresh garlic cloves
- Generous dash of sriracha

You can sprinkle/add some crushed roasted peanuts and arrange some quartered cherry tomatoes on it. It tastes amazing. Beautiful, colorful and really tasty.

Costco Cauliflower Pizza (frozen). I keep lots of sautéed veggies in my fridge and use them for all sort of stuff...

- Cook the frozen cauliflower crust pizza as per instruction, and add more toppings - sautéed onions, sautéed green peppers, sautéed mushrooms and a few teaspoons of Raos tomato sauce (also from Costco). Put some red chilli flakes and sliced olives on top and serve. No one can guess it is not a gourmet pizza.

I make a lot of kebabs (lamb, chicken, tuna) and freeze them. I also keep prepared dough in my fridge. I make wraps with the kebabs that is very filling and usually 1 roll is enough for 1 person.

- Roll out and cook a large square shaped parantha on the pan (Indian shallow fried bread)
- Heat kebabs in microwave and line it in the middle of the parantha
- Add salad generously on top ( Chop green onions, tomatoes, cucumbers - add some lemon juice and salt - mix well)
- Add a few dollops of mint - ranch dressing on top (Mix store bought ranch and mint chutney)
- Roll and serve.

My kids don't like very spicy hot foods so I stick to this. But, you can actually add other things to it - green chillies, sriracha, tamarind chutney etc and make it more spicy or tangy for adults.

I always have dosa batter (premade from grocery) in my fridge as well as boiled potatoes. I can quickly make potato-peas-onions-cashew stuffing (around 8 minutes) and then make stuffed dosas for the family. Serve with store bought coconut chutney (frozen).

Ikea frozen meatballs, gravy, lingonberry jam.
Served with homemade garlic bread and steamed veggies.

Dessert is usually vanilla icecream mixed with chopped banana, apples, grapes.

My kid is an adventurous eater but also says her favorite meal is "taco bowls," which is:

-Warmed up shredded chicken or pork I made some other time in the instant pot or slow cooker-- even shredding a rotisserie chicken would take longer-- or microwaved meatless crumbles with some seasoning or something-- Active time-- 1 minute

-Rice made in the Instant Pot-- Active time-- 2 minutes

-Refried or rinsed black beans (plus a sprinkle of seasoning) in the microwave-- 1 minute

-Frozen corn microwaved with some butter and Badia Completa-- 1 minute

-Fetched from fridge or pantry: Guacamole, shredded cheese, sour cream (if we have it), salsa, tortilla chips, jarred jalapeno slices, etc.

Even fetching and exchanging things in the microwave this takes like 10 minutes to get on the table (if I start the rice earlier or had some pre-cooked) and everyone loves it.

Scrambled eggs always sounds fast in theory but takes forever for me because everyone in my home likes their eggs made slightly differently. So it’s like eggs to order and takes so long.

I like to make pancakes with boxed pancake mix and microwave a big thing of frozen berries to spoon on top.

Also I make a lot of fried rice. One of those things of frozen rice, frozen mixed vegetables, a couple of eggs, soy sauce and sesame oil and a scallion if I have one.

If I’m feeling especially lazy I serve popcorn and ice cream. Not at the same time.

Rotisserie chicken and a roasted veggie (I buy the veggie pre cut, usually broccoli)
Black bean soup (made from beans and salsa) and if you want to add a quesadilla, you're on your own.
Make your own pizza, using naan as the base.
Spaghetti with premade meatballs and jarred sauce.
Premade falafel, but some chopping involved for tomato and cucumber, premade hummus or tzatziki, pita, olives, feta...

Meat and cheese platter with veggies and fruit with baguette- eat as we watch a movie together

Tortilla (burrito size) filled with left over chicken, rice and cheese- wrap, cover in foil put in oven/toaster oven 375, 5 minute… kids eat this at home or in car on the run.

Mac and cheese with nuggets
