Roast a whole chicken. Eat the meat. Toast the bones and skin then simmer for stock.

I started making my own beans in the instant pot about six months ago because canned beans are really, really hard to find. And it's so easy to make yourself.


+2. Dried beans are way cheaper and better. To the PP who doesn't have an Instant Pot, it's worth getting one if you're trying to get more beans in your diet. They are reasonably priced and routinely go on sale.
If you can't get one, make sure your beans are not old, and soak them overnight with a bit of baking soda.

This whole thing is so weird. Stock is supposed to be made from parts that can't be used for anything else. Not perfectly edible breasts and wings.
