I’m in a dinner rut and need easy ideas

Breakfast for dinner is a favorite of my kids
Shrimp scampi with pasta
Terriyaki chicken or shrimp stir fry w/ lots of frozen veggies thrown in
Edamame
Roasted Brussels sprouts
Baked salmon w/ pesto on top
Fajitas
Chicken breasts in the slow cooker w/ either bbq sauce or salsa and then easy sandwiches of tacos
My kids will eat any type of soup or chili if they can toss shredded cheese and crumbled tortilla chips so we’ve been doing lots of white bean and chicken chili
Kale and kielbasa soup
Kielbasa sliced w/ mashed potatoes, broccoli on the side
French onion soup and baguette
Chicken schnitzel

Burritos (we make veggie burritos with black beans)
Pesto pasta with whatever vegetables we have, and chicken sausage
Spaghetti and meatballs with jarred sauce and frozen meatballs, usually served with salad
Crockpot split pea soup with crusty bread
Crockpot beef stroganoff
Crockpot chili
Instant pot chicken biriyani
Instant pot wild rice and mushroom soup
Baked salmon, brown rice and steamed veggies
Garlic chicken and rice
Beef and broccoli stir fry and rice

In the summer we often do a grilled protein on a salad-so good and quick/easy!

NP. I took your recommendation and made sheet pan chow mei tonight. We had air fryer panko tofu on the side. I pretty much followed the smitten kitchen recipe, but used a bag of fresh mixed vegetables from the produce section, and added sliced almonds. It was really good! I'll make it again for sure (it was a little too heavy on the sesame oil, which is what I think every time I follow a recipe with sesame oil anyway).

I am a fan of throwing a protein and veggies onto a sheet pan (all cut to same size pieces), tossing with a sauce/marinade to slant toward a flavor profile and roasting at about 400 deg for about 20 min. Examples:

Chicken, cherry tomatoes and broccoli tossed in pesto - serve over pasta with mini mozzarella balls
Beef, green beans tossed in soy vey - serve over rice
Salmon, broccoli, halved baby potatoes tossed in evoo, lemon and Greek seasoning- crumble some feta over at end
Chicken, sliced pepper and onions tossed in evoo and taco seasoning - serve with tortillas, guacamole, etc

I did a bunch of meal prep this weekend, including a couple of comfort casseroles that just need to finish baking when I get home from work:

tuna noodle casserole
hamburger pie
made up some meatballs
prepped veggies for sheet pan chicken enchiladas
made white chicken chili in the crockpot to heat up for lunches
sliders

Sometimes, i don't know what to cook anymore. Just eat cereal for dinner!

sometimes, I make lemon chicken. Pretty simple. Cut chicken breast into chunks, add salt, and black pepper, squeeze 1-2 lemon juice into it. When the chicken is cooked, it is done.
I do make the sauce gravy like by adding a few table spoons of water mixed with corn starch or rice flour. I like the sauce.
You can even add broccoli and cover it for a few minutes.

I’m Thai and that’s insulting. Don’t those frozen veggies turn to mush?

NP, but frozen vegetables can be great. Peas degrade really quickly after being picked , but when flash frozen in the field stay pretty good. The trick is to toss them into the sauce about a minute before it’s done cooking—they don’t need anymore than a minute on heat. I throw frozen peas into lots of things. Other vegetables vary in how good the frozen version is. I also freeze spinach all the time if we can’t eat the whole container before it starts to wilt. If you’re going to cook it, there no real difference if you freeze it first.
