Turkey meatballs with mashed potatoes
Spaghetti bolognese Roasts (coat glass Pyrex with oil, then cover with onion slices, put your meat of choice in the middle, surround by potatoes and other veggies of choice, add salt and pepper, and out in the oven) Frozen fish sticks with baked sweet potatoes Moussaka (I do just oil, onion, potato and ground lean beef, then pour a mix of beaten eggs and milk with salt and pepper and bake, I.e. I skip eggplant altogether) Chicken soup with carrots and egg noodles Sticky rice with scrambled eggs on top and crispy seaweed as seasoning We eat a lot of cut up peppers and cucumber for salad |

We do a lot of cheese & charcuterie boards with stuff from trader joe's or lidl so it's not too expensive. 1-2 cheeses, a meat if you want, jam or honey, pick what you want from olives, pickles, baby carrots, baby tomatoes, celery sticks, nuts, dried fruit. Serve with bread or crackers.
Based fish, rice in the rice cooker, and a vegetable like broccoli is also easy. We put pork shoulder or butt in the crock pot, then make BBQ sandwiches with coleslaw. Serve with a salad or vegetable and cornbread mini muffins (cooks really quickly). Not super exciting stuff, but we have little kids too and these can get the job done. |

Pot roast is super easy--just need to start it early. place carrots and potatoes around it. Dinner done.
Throw chicken into an iron skillet and bake at 350. I usually pour Dale's Sauce over it--similar to teriyaki sauce. Bake for 40 minutes--longer if frozen when you start. Salmon filets at 400 for about 15-20 minutes, depending on thickness. Again, I use teriyaki sauce. Occasionally, put a little mayo with parmesan over it. Bake a potato. Suggestion of chili is good, too. I use Mccormick's package--brown the beef, throw in a couple of cans of beans and a can of tomatoes. Ready in less than 30 minutes. Costco has a frozen lasagna that works and lasts for days. Frozen breaded shrimp on cookie sheet works, too. Easy. When you bake a dinner, bake potatoes with it. Save one of them and make home fries the next night. 5 minutes. Baked sweet potatoes are good, too. |
