Peas degrade really quickly after being picked , but when flash frozen in the field stay pretty good. The trick is to toss them into the sauce about a minute before it’s done cooking—they don’t need anymore than a minute on heat. I throw frozen peas into lots of things. Other vegetables vary in how good the frozen version is. I also freeze spinach all the time if we can’t eat the whole container before it starts to wilt.
