I'm just getting back into the swing of cooking after getting back to work after maternity leave. I NEVER cook chicken unless it is bonless skinless, but I have some split breasts in the freezer that I got a great price.
What can I make for dinner tomorrow night that can be on the table in 30 minutes or less? Other (fridge) ingredients I have on hand right now: spinach, asparagus, feta, parmesan, red and yellow bell peppers, mushrooms, tomatos, blackberries, blueberries, apples, spicy pork sausage, cheddar cheese My husband loves fried chicken, so that was my thought when I bought the chicken, but I haven't ever fried in the house either. Not against it if anyone has suggestions. |

You could coat in egg then parmesan, add some garlic and salt and then bake/roast. Probably longer than 30 minutes--probably closer to 40. Wilt some spinach on the side.
If you have plain yogurt, you could marinade the chicken in that all day for more flavor. (And could skip the egg then.) |

thaw chicken. Roll in breadcrumbs mixed with salt, pepper and paprika. put skin side up on pan with sides lined with silver foil. Bake 350 about an hour....
Steam the asparagus, make a salad. |
| Do you have onions, potatoes? One of my favorite easy dishes is to put chicken in a large (9x13) casserole dish, spread around sausage, cut onions, garlic cloves, bell peppers and potatoes. Drizzle olive oil on top and sprinkle Italian seasoning over it. Cover with foil and bake about 45 minutes at 350 until the chicken is done. |
| make a quick sauce of peppers, mushrooms, tomatoes. braise the chicken in the sauce, and serve over rice or egg noodles. |
| Do your split breasts include skin? If so, just rub on some seasoning (just salt and pepper is fine, but I also like garlic powder, paprika, thyme) and roast at 425 for about 30 minutes. To make it really easy, toss the asparagus in the same oven to roast about 15 minutes before the chicken is done - could also throw in the mushrooms if you want to use more of your veg. Eat with bread on the side if you need a carb, which my hubs always does. |
