Agree with others— Noelle will be pronounced the way you’re imagining. As well, if she wants to go by her middle name, Noelle is recognizably feminine whereas C. Noel is a toss up on an email signature...

Expecting for a similar date, we’re considering Noel as gender neutral, with pronunciation no-el. If born exactly for Christmas we would use a different name though since it’s our main name.
