Not as likely to have a centrally located WF but nice places for a vacation.
Wilmington, NC is great but has a very small downtown area--so, definitely cool and quaint but outside of that area is a lot of strip malls

While driving through North Carolina we saw some crude highway billboards like, 'I got crabs at Dicks'. Lots of redneck vibes in NC.

I was going to say Lenox or Northhampton MA. Or there's a place in Vermont...I always get the towns in Vermont mixed up, though.
But real hipster places definitely don't have Chipotle or Starbucks. They have fancy coffee places named after a guy that lives there that bakes vegan scones and grinds and roasts his own coffee on site. They wouldn't be caught dead drinking starbucks.
If you just want to make sure you can eat a taco and a latte, that's easy.

In my opinion, he most hipster place in NE that also has SB, Chipotle, and WF is Providence, although I don't know why you would go to Providence and go to those places-there are great independent coffee places and great restaurants (including really good dominican, venezualan, and cape verdean places).

Asheville NC, very hipster awesome food scene.
Also another vote for Wilmington, NC- you can go on a walking tour of the Dawson Creek filming locations. Also close to beaches.

What a weird post.

All places have groceries, coffee, and Mexican.

Learn to seek out independent places when you visit somewhere.

All suggestions have been good.
