my current approach:
- line sheet pan with heavy duty foil - insert cooling rack - bake at 325 for approx 20 min (depends on how thick it is) - cool bacon on paper towels on a plate - let bacon fat cool until solid then roll up and toss - wash pan & rack in dishwasher I like it crisped up and firm, but not burnt so I go low and slow. |

This is exactly how we do it too. We don't cook the bacon on a paper towel though. We just blot it with a paper towel to get the grease off |

| Hello, people! Throw away the grease, aka lard? Are you kidding? Put it in a jar and in the fridge. It's the best for sautéing chicken, making pancakes, cooking eggs etc. |
I sometimes do roast potatoes wedges on the sheet pan before I toss the foil - YUM! |
I can't anymore, and more's the pity. You know what's better than bacon grease? Duck fat. I made pan fried duck breasts once and I saved the fat. I hid it in the back of the fridge and only used it for making hash browns. Gods, they were the best I've ever had. |
I cook mine in a baking tray lined with foil too, but after experimenting found that 20 minutes at 400 is perfect for us. (We like it a bit crispy) I don't turn it half way though. |

Whenever I see a giant mound of bacon on a buffet, I get the distinct impression they are tossing it in a deep fryer. |
This is how we do it too and wow how much bacon our family goes through. I read once online sprinkling some brown sugar or drizzling maple syrup when it's almost cooked but I haven't tried it yet for fear of establishing a new expectation in our family. |

We have a few times, but I don't like the texture as much and how it can stick to the paper towels. It's ok for an emergency though.
