Plus, some folks, like me, heat up their slice of apple pie before eating and the microwave would kill any bacteria. ?

OP again. Thanks everyone! I'm currently eating a piece of warm pie and it's delicious! I wish I could share a piece with each of you. I ordered it from Whisked DC, a local bakery. http://www.whiskeddc.com if anyone wants to order their own.

Custard pies, including pumpkin, and cream pies should be refrigerated.

Yes. But even leaving a pumpkin or other custard pie out for one night wouldn't taint it horribly. At least, I'd eat it. We often make the pies the night before and leave them out overnight to cool, then refrigerate the next morning. Never have gotten sick. I might not do this in the summer but in winter when the house is cold, it really doesn't matter. My host family in Japan used to leave all sorts of stuff out overnight in winter -- curry, soup, you name it -- and eat it the next morning. Sometimes for several days in a row. They were fine, I was fine. Unless you have a compromised immune system there really isn't a reason to worry about most of this stuff when it's just a day or two.

I wish I had the recipe! I ordered it from Whisked DC (link in an earlier post). I normally do my own baking, but I'm not really a pie person (I'll take cake or cookies over pie). I volunteered to bring a pie for Tgiving, so I ordered it. I'm not sure it has converted me into a pie person overall, but i'm definitely digging this specific pie.

We keep our in the fridge but my aunt just left them on the sideboard in the dining room and we ate the leftovers from there. No body ever got sick.
