But even leaving a pumpkin or other custard pie out for one night wouldn't taint it horribly. At least, I'd eat it. We often make the pies the night before and leave them out overnight to cool, then refrigerate the next morning. Never have gotten sick. I might not do this in the summer but in winter when the house is cold, it really doesn't matter. My host family in Japan used to leave all sorts of stuff out overnight in winter -- curry, soup, you name it -- and eat it the next morning. Sometimes for several days in a row. They were fine, I was fine. Unless you have a compromised immune system there really isn't a reason to worry about most of this stuff when it's just a day or two.[/quote]
