Smoked salmon is delicious. But no high school student wants to be the person that brings that smell into the school, or a person with smoked salmon breath for the rest of the day If you care about your kid's social status, nothing stinky like smoked salmon or other fish. What about a caprese sandwich? Ciabatta bread, sliced mozzarella, sliced tomatoes or sun dried tomatoes, a bit of basil and olive oil. |

I imagine this makes a lot, at least 2 lbs. We might have deli meat for a sandwich maybe once or twice a week. I feel like cooked poultry doesn’t freeze and thaw well. |
| Season the outside of a pork tenderloin, then sear in a cast-iron or stainless skillet on stovetop. Stick in oven at 375 for about 20 minutes. Cool and slice thin. Fabulous for sandwiches. |
