Sandwich ideas for teen that don’t include deli meats

My teen doesn’t like the lunch options at her school and packs her own. She usually resorts to sandwiches as they are the easiest option.
With deli meats being classified as a carcinogen because of the nitrite levels ( even the ones that are “ nitrite free” ) , what are some sandwich options that don’t include them? She’s a pretty adventurous eater and is willing to try different options.

Cook a turkey breast and slice it thin and make any turkey sandwich

I will cook chicken thighs in large quantities and throw those on a bun.

You can marinate (yogurt, garlic paste, ginger paste, tandoori masala, salt) boneless, skinless chicken thighs for a couple hours in the fridge, and then cook it. Slice it thin, layer it with lettuce leaves and coriander-mint chutney (bottled). Done.

You can also make chilli, cook till you reduce most of the liquid, add cooked corn, shaved carrots, salad greens, cheese, lettuce etc and make a sandwich in a sandwich maker like below.

With a sandwich maker - you can put in any protein (like egg salad) between two slices of bread and make a beautifully sealed and toasted sandwich.

How do you cook a ham from scratch ? I’d appreciate any recipes anyone has tried.

Fast casual places often make veggie sandwich options with grilled or marinated portobellos. And roasted peppers of various colors. No specific recipe but I've had this kind of thing many times.

I also like the bagged salad mixes that are widely available now. They do frequently come with bacon but many just come with crunchy toppings. They are starting to sell lunch size portion bags now.
