You can certainly buy vegan mayo, but if you don’t want anything too processed, happy herbivore has a good mayo recipe for the eggless or chickpea salad.
* legumes, hummus, and tofu mayo have protein. Eggless salad is chock full of protein since it’s tofu.

Cut thin slices of tofu, add any spices or marinade, and bake in the oven. You can then use them like deli meat on sandwiches. A block of tofu can last a week.

I put mine in the air fryer

I cut tofu into “fingers” and air fry, kids dip into hoisin sauce or chili oil mmmmmmmm

Zait and zaatar sandwiches in pita bread. This is typical sandwich for school kids in the Middle East.

It’s olive oil and thyme (get at a middle eastern shop to make sure it’s good, it’s a mix of thyme, sesame seeds and a bit of sumac). Try at home first to check that your daughter likes it. Some people also add a cucumber.

tofu on pita with peanut sauce (you can get at Trader Joes) (and I put sliced cucumbers but you can be creative.)

I think trader joes also has cooked tofu cubes if you are feeling lazy. but otherwise cut into squares, cornstarch and air fry or pan fry. You can make a bunch and serve later.

Can’t really keep in freezer, but falafel sandwiches are great also. They can stay in fridge especially if you add the sauce and vegetables later.

I’m on a tofu kick. Tofu salad is great, I use firm tofu, minced green onion, minced cilantro, diced tomatoes (squeeze out extra juice), seasoned rice vinegar, olive oil, salt and pepper.

I also like tofu scramble, with toast or in a burrito. I use one brick crumbled form tofu and 1 block silken tofu. Scramble over medium heat with a tray of roasted veggies (I like grape tomatoes, zucchini, shallot), a tablespoon of cornstarch dissolved in water (for texture), nutritional yeast, salt and pepper. I vary the vegetables and sometimes add a can of black beans.

I love TJ but their precooked tofu is nasty.
