It's one of my favorite things to buy there! I used to have to make treks to TJs and stock up as the closest one is pretty far. Fortunately Wegman's has started carrying a similar baked tofu. It's pricier. I'd love a Wegman's brand one. |
| For a whole my kid would eat a whole avocado and potato chips. I would slice the avocado in half, use the knife to pop out the pit, then put the pit back in, put the avocado together and stick the whole thing in a ziplock. I’d pack potato chips and a fork and she’d smush the avocado a little with the fork and then dip the chips. |
Why does it matter? You can’t figure out what spinach to use? |
Yes, baby spinach! It is the easiest thing and everything stays fresh for the week. Wegmans has a cheaper hummus, even organic is cheaper - the other fancy brand that is usually available, I'm forgetting the name, is expensive. That is the flavor she prefers, so we stick with that. |
The super firm is good raw on a sandwich (like cold cut turkey), and it's pretty easy to cook 2 blocks of tofu and put it in the fudge to use for a few days. |
|
In the fridge.
Or in the fudge |
Why? |
If you put the put back in it blocks the air from getting in there and turning the avocado brown. Popping it out and putting it back in makes it easy for the kid to get it out without a knife. |

Grilled vegetables like red onions, eggplant, zucchini and red peppers in a wrap sandwich with baby spinach and hummus.
I am not vegetarian but I make this all the time. Sometimes I add hummus or some pesto Sometimes i use tuscan pane bread from Trader Joe’s. I’ve also don’t chick pea salad like egg salad. Mayo, mustard, celery, celery salt on soft bread. Baby Spinach, cucumbers, tomatoes, alfalfa sprouts and hummus. All very yummy! |
