I’m the poster with the vegan 11 year old.

My daughter likes the ease of sandwiches for lunch. Any tasty options? In an ideal world, something that could last awhile in the fridge or freezer would be great.

Chickpeas are great for this!

I'm not vegan, but I'll happily eat chickpea salad instead of egg salad.

My meat-eating daughter prefers a lemon-dill hummus/spinach/feta wrap for her lunch. It is delicious. I don't think the feta adds much or you could do a non-dairy option.

Have you tried Jackfruit slices? I tried it recently at a party and everyone was raving over it, and then I saw it recently in our local natural foods market.

Rainbow wrap - wrap with hummus, cooked cubed sweet potato, shredded red cabbage, shredded carrot.

Mash black beans with salsa, spread on bread, layer sliced avocado on top

Almond butter with fresh blueberries in a sandwich or open face

Baguette with pesto, bell peppers, tomatoes, warmed in air fryer and wrapped in foil

These are our favorite. My kids like to make egg bites with vegan Just Egg (cubed cooked potato and thyme, or spinach and sautéed mushroom) and pack those.

Sushi is a hit and easy to pack - cucumber, tofu, mango, avocado, shredded carrot

Jackfruit can be shredded like barbecue and has texture of meat - beware it’s stickier than you can ever imagine, though. Your kitchen will require a deep clean unless it’s from a can. Packed in water not sugar fyi.

Rehydrate and coat with bbq sauce for a quick wrap or sandwich - not processed soy isolate, made from whole soy

IKEA has veggie hot dogs that are good and not junk - the ones in freezer with obvious veggies showing.
Aldi has decent veggie burgers with veggies and beans, not junky.

Multi-server containers also last for many weeks, and at least 2 weeks after opening

If you put a little lemon, lime or organge juice on avocado, and wrap is in saran wrap so no air touches it, it will star green

Third-ing. I'm also not vegan and absolutely love chickpea salad.

For a good ol grilled cheese Violife makes an imitation American Cheese that I honestly can't tell the difference (I mean given how processed American Cheese is, it makes sense).

Tomato, cucumber and sprouts mmmm. A little mustard and s+p, nice and simple and yummy. You can grow your own sprouts that last forever!
