We have a relative by marriage that creates problems. Eat prepackaged/takeout and food like roasted veggies or mashed potatoes straight from the cooking pot or tray. Skip fresh produce if they rinse berries and leave in colander in sink used for handwashing and dirty dishes. ie washes raw egg hands in the sink over the berries. Cuts cantelope with a knife that was out for hours sitting on a cutting board that also was used including for charcuterie. People got sick one year from large undercooked turkey - followed time frames - thermometer. Most passed on eating it - saw pink etc. |
I think a raw cake would fall apart. You can also tell when poultry is undercooked and you wouldn’t eat it. These problems solve themselves. Also berries aren’t going to catch a cold from sitting near meat in a fridge. |

It’s not worth it, especially for poultry. Food poisoning can have really serious impact - I have a relative who was disabled for life by poorly prepared chicken. I probably wouldn’t get that worked up about eggs or even whole beef cuts - but chicken, always needs to be treated as if radioactive until it’s cooked properly. |

OP, my ILs are like this and I am just selective about what I eat at their house. With family meals I always contribute a couple sides so there's always something for me to eat even if they do weird things with the rest. My kid is similar. We are polite about it but just wary about items that appear undercooked or expired.
As they have gotten older, they cook less and the problem solves itself. We like cooking and are happy to step in. We take them out for meals. It's just one of those things I deal with when visiting them. It's only a couple times a year so it's not too bad for us. If we lived closer, I'd probably try to host whenever I could to avoid this issue. |
You’re supposed to store some meats uncovered in the fridge before roasting so it dries off and gets crispy. There’s no food safety risk if it’s not touching anything. |

My mom is also the same way and I had unexplained diarrhea constantly growing up. Then, once while visiting as an adult, I ended up in the ER sh*tting blood from food poisoning. She was making brick chicken on the grill w a foil wrapped brick but never changed the foil after multiple uses (over months of time)… found maggots under that foil. Anyway, we stopped visiting after that and started inviting her here for new holiday traditions with safe food options. She was angry about the change but had to deal. |

If the meat is covered who cares? If it’s not covered, nothing should be on top of it obviously.
