Corn chowder with garlic bread. Hello cold weather!
Then something with coconut milk and thai chili red paste, etc. noodles and probably tofu because I read a recipe on here so thank you DCUM. I also have cans of water chestnuts and baby corn to throw in that are aging in my pantry. Time to rotate! |

It is just me and DH, I am trying to use up the leftovers and stuff in the fridge so that we have space for the Thanksgiving week. We will have 5 adults from 23rd onwards. For now - I am trying to eat simpler meals for dinner with more veggies.
Monday - Red kidney beans (rajma), rice, okra w/ onions and potatoes w/ cauliflower (left overs) Tuesday - One pot rice and veggi dish called Tehri with spiced cucumber-yogurt raita- (https://www.youtube.com/watch?v=VaPuQIJt8yM) Wednesday - Chicken pad thai with lots of veggies - leftover brocolli, mushrooms, pepper, carrots, cucumber, mung sprouts, water chestnuts, cilantro, basil, baby corn etc. Thursday -Zucchini, pepper, eggplant in chickpea pasta w/ marinara sauce to use up the veggies. I will cook up some shrimps for DH to add to the pasta Friday - Leftover Tehri for me with additional veggies added ...i will also make a garlic, green chillies, cilantro and peanut thecha (Maharashtrian) to go with the tehri. DH will probably eat leftover pad thai. Saturday - Mexican veggi lasagna. It is festive and kids love it. I will make a side of mexican shrimps in tomato and pepper sauce too to use the shrimps. Sunday - prepwork. And eating leftovers. |

I'm undecided! I have stuff I was excited to make this week, but i also have a fridge that's too full, so I have to slow my roll.
Today I made my first sourdough bread in years, which we ate along with leftover NYT spinach artichoke chicken stew. We have some arugula from my dad's garden that has to be used, so I might make the NYT creamy white beans with arugula instead of the dal makhani I was planning. Or I could use the arugula for a Greek tuna salad. Wednesday I want to do something more ambitious like coq au vin or Turkish manti. The manti are a bit intimidating though, they'd involve figuring out how to use a pasta roller. Maybe that's a weekend project. We have leftover pizza from a birthday party so that's Thursday. Friday dinner will be leftovers or my husband's problem. He's made the same braised tofu dish every week for the last 3, so I made sure we have the ingredients for it. |
| I made Marry Me chicken today and it got inhaled. Tomorrow is Mississippi roast with mashed potatoes. Next is Irish lamb stew. |
