What are you cooking/eating this week?

What meals etc do you have planned for this week? I'm in a rut and always enjoy everyone's info on this.

I'm roasting a chicken tonight and serving it with doctored-up Stove Top Stuffing and the potatoes I'm roasting it with along with the broccoli I have left over from last night.

Making a chicken pot pie tomorrow with some of the meat from the chicken.

Made some tuna salad to have in the fridge for the next couple of days for sandwiches or to eat with crackers or whatever.

I'm off from work today so I baked some cherry bars from a Sally's Baking Addiction recipe today. They are delicious but I overbaked them a bit (I virtually always overbake, and I'm not even sure why).

Have some Italian sausage that I plan on stuffing into a couple of acorn squashes with brown sugar.

Not sure what else I'm doing. Probably just eating a lot of summer sausage and cheese, lol.

I am making a matzoh ball soup tomorrow. That will give me leftovers for chicken pot pie and also chicken and dumplings later this week. And tonight we're having stuffed chicken (spinach, brie and cranberry sauce). I love chicken and I'm the only parent here this week so that's what everyone will be eating. Your stuffing is giving me pause though because I do love stuffing too.

Ooooh, I'm the OP with the roasted chicken. I should make chicken and dumplings as well.

Tomorrow chicken burgers with salad
I don’t work Weds so will go to Costco. Will have the rotisserie chicken probably but not sure exactly what I’ll do with it yet.

I’m roasting some brussels sprouts and cauliflower. I will have it tonight with some leftover rotisserie chicken. Then I’m going to use the leftover cauliflower with some ground turkey to make cauliflower turkey tacos in corn tortillas. I’m on my own this week so that will probably get me through until the weekend especially because I’m taking my father out to dinner tomorrow night. I can’t even remember the last time I was in a real restaurant, might’ve been last spring.

Tonight I had dinner plans with a girlfriend but she cancelled so I think it will be this NYT dish I've been planning to make because I have a bunch of halloumi from Costco - Crispy Halloumi With Tomatoes and White Beans.

Haven't decided tomorrow yet, but I'm off and it's date night so I can prepare something a little nicer/that requires more prep and time.

One night will be leftover egg roll in a bowl that I froze last week. Another will be leftover lasagna.

I made the Emeril Arugula salad on the weekend, and so still have half a batch of dressing, and some arugula in the fridge from that, so that will be the salad one night.

Another night I am planning to make the Wishbone Kitchen PLT salad - first time trying it but it looks good and I bought all the ingredients for it.

Considering salmon one night - either with cippolini onions, or maybe cajun parmesan style.

Tonight I am having the last of a NYT chili recipe I tried recently, along with avocado and rice. And I just prepped stuffed peppers for tomorrow— they will spend the day cooking in the crockpot. Wednesday ima going to have a simple garlic shrimp over fettuccine. Thursday’s plan is Japanese vegetable curry, and Friday pizza.

I broke down and ordered pizza tonight.
rest of the week will be salmon & little potatoes, lasagna, and sheet pan chicken thighs w/ veggies.

Sausage and orzo tomorrow.
Leftovers or freezer food on Wednesday.
Some sort of chicken on Thursday.
Takeout pizza on Friday.

Lentils with large pieces of ham cut from a whole shank. Little bits of carrot, celery and onion. Bouillon added. Yum.

Roasted eggplant, cherry tomatoes, onion and garbanzos over Israeli couscous and sprinkled with feta.

Butter beans in tomato sauce with baguette.
