Delicious green bean recipe (no nuts, vegetarian) for Thanksgiving?

Anonymous
DH makes this and it is amazing.

Blanch the green beans. Dunk in cold water to stop cooking. Immediately take it out and let it dry on a clean dish cloth.

Toast some sliced almonds until crisp and changes color to pale brown.

Slice garlic and brown it in oil. Toss the green beans, and a thick sauce made of soy sauce with some honey and salt, chilli flakes (taste it and make it to your taste). Toss the almonds in it. Let it cook for a bit on high heat tossing all the time until the sauce adheres to everything. Sprinkle more almonds on top to make it even more festive. Also, you can sprinkle some toasted sesame seeds on it.

Almonds and sesame seeds can be omitted if there are people who are allergic to it.

It a mind blowingly simple but really delicious recipe. I sometimes also put some sauteed cauliflower stem (cut into matchstick. It comes together in a jiffy and it is finger licking good.

Pancetta is not vegetarian

Yes, of course

I noted that in the next post and said the recipe is delicious with olive oil and without the panchetta.

I have had green beans sautéed with chopped mushrooms. Pretty good!

I toss mine with olive oil, soy sauce, and chili flakes and then roast them.

The Molly Yeh Green Beans with Magic Sauce are our favourite green bean preparation in our household. That said, it doesn’t reallymeet traditional Thanksgiving flavour profiles, so it might be odd with the rest of the meal.

I do a green bean casserole style preparation, minus any cream sauce. First, I blanch the green beans. Then I sauté some sliced mushrooms, onion, and fresh thyme in some butter. Then I toss in the beans, salt and pepper to taste, and top with some crisped up fried onions. You get the same overall flavor of the casserole, but with a greener, lighter feel.

Ina Garten has a good recipe for a green bean salad where you blanch the green beans and toss them in an EVOO/white wine vinegar/dijon dressing, and serve at room temperature.

I think for Thanksgiving though, I would go with the very simple suggestion upthread of green beans with a little squeeze of citrus.
