There is a good Hungarian pepper stew on NYT cooking site that is peppers, onions, tomatoes, with spices and garlic. It is really good served with some crusty bread.

Roasted sweet potato stuffed with roasted chickpeas and wilted spinach, with a tahini maple dressing drizzled on top

I find I eat vegetables as a meal best if there are several dishes and not just one. Tofu stirfry with broccoli and peppers and snow peas and a marinated carrot salad, maybe add cauliflower rice. Warm roasted cauliflower salad with cherry tomatoes, shallots and seeded with some other crispier vegetable. Sweet potato, beet, parsnip gratin (can use dairy alternatives instead of the Parmesan and cream) with an arugula/cucumber/balsamic salad on the side.

Make your own kale chips.

I also do caramelized Vidalia onions. Many simple veggies taste delicious with a spoonful of caramelized onions or marinara sauce or both.
Roasted sweet potatoes are delicious— sprinkled with cinnamon and maybe a pat of butter.

For me vegetables are more soups, stews, incorporated into rice, rice and bean, and has type dishes. If there is a meat entree, which is rare, then roasted vegetables or sometimes the lazy solution of frozen peas or broccoli or cauliflower.

I don't think vegetables only is a healthy meal for a family. maybe ok for a crash diet for you though.

Thank you! I had to pause while typing to seriously put the full name in there because it bothers me too and I don't want to slip into saying it because it's shorter.

The sweet potato gratin was great. Going to try the mashed potato with peppers and onions too. Not adverse at all to some legumes (or even small amounts of meat or cheese) but really trying to pack in the vegetables rather than having them be the scraps. A bonus is that I found a great vegetable recipe website. Will post it later when I have it on hand.
