We need to eat more vegetables. I can't really think of dishes that are ALLLL vegetable besides of course salad, and maybe spaghetti sauce with a tomato sauce. I always want to throw in a grain or put on bread or in a wrap or something
Any ideas of dishes that are all vegetable? Just ideas would be great. I can figure out recipes from there. Thanks! I don't know why this is so hard for me. |

I make a sweet potato, kale, onion dish that’s really nice, you do add a bit of milk and cheese, but otherwise it’s all veg. Google sweet potato kale gratin for recipes. I use less cheese and stuff that they suggest to make it a little healthier.

Ratatouille. You know, like in the movie. It's delicious. But people usually eat vegetables with grains, OP. In France you have bread at every meal, partly to soak up all the great sauces.

| I make a vegetable casserole that made of roasted eggplant; roasted zucchini; sliced tomatoes; sauteed onion, mushroom and green pepper; and garlic. It is seasoned with salt, pepper, and herbs and topped with shredded cheese and baked. |

Ratatouille is really good if you make it well.
Also, you can do spaghetti sauce, loaded with vegetables like mushrooms and peppers and then serve it over spaghetti squash. Also, just a sheet pan full of roasted vegetables is really good. |
| I make sautéed peppers and onions (cooked until really soft and carmelized, with some balsamic vinegar added at the end) and serve over mashed potatoes. One of my great comfort foods. |
| couscous with roasted vegetables. mmmm. |
| Eggplant Parmesan. |
| Roasted vegetables. |

I'm not sure if this meets your intent, but adding beans, lentils, or chickpeas can really bulk up a vegetable dish so it feels more like a meal.

Vegetables as a main with no grain/starch of any kind???
I have lots of great recipes for vegetable sides, but nothing that would make a good meal. |
| Cookbook simply in season has a ton. Most of my recipes are all veg. I aim for 5+ a day. Google simply in season recipes or see if your library has a copy. |

| Look to cuisines that naturally have lots of vegetarian dishes - Greek, Indian, Lebanese, etc. Just in Greek cuisine, there is an entire category of dishes called "ladera", which means "with oil", as in olive oil. These are usually some sort of sautéed vegetable, like green beans, eggplant, zucchini, potatoes cooked into a stew with onions and tomatoes. Greeks also eat tons of legumes - white bean soup, lentil soup, baked giant/lima beans, and split pea soup. There is a spring dish of stewed artichokes, potatoes, carrots, spring onions, dill, and fava beans. Greeks often serve these dishes with bread, but you can skip if you are avoiding grains. |
| We love tomato sauce with caramelized onions, eggplant, zucchini and tons of fresh basil over spaghetti squash. |
