I love this cookbook. Only one I kept after purging the shelf and going digital for recipes for a move.

If you count potatoes as a vegetable, it's pretty easy to use them in place of a starch or spaghetti squash or zoodles in place of noodles.

I have a great vegetarian shepherds pie recipe I can post if there’s interest (it’s a jillion years old so will have to type it). It’s really, really good and adaptable if, like me, you hate recipes.

We just have roasted or stir fried egetables and/or salad with almost every dinner.

OP here-thanks for planting this idea.

I boiled up cubed potato, turnip and carrot (callback to "boiled dinner"), lightly mashed it and then added some caramelized pepper and onion on top. This was a great combo!

Japanese style curry with any veg you can think of. Veggie chili with sweet potato, zucchini, eggplant and peppers. Indian curry with cauliflower and peas or spinach. Goulash made with coleslaw mix, onions, tomatoes and mushrooms. Portabella pizzas. Zucchini boats stuffed with mushroom a’la cheesesteak. Au gratin ALL the things.
