I love this cookbook. Only one I kept after purging the shelf and going digital for recipes for a move. If you count potatoes as a vegetable, it's pretty easy to use them in place of a starch or spaghetti squash or zoodles in place of noodles. |

OP here-thanks for planting this idea. I boiled up cubed potato, turnip and carrot (callback to "boiled dinner"), lightly mashed it and then added some caramelized pepper and onion on top. This was a great combo! |

Goulash made with coleslaw mix, onions, tomatoes and mushrooms. Portabella pizzas. Zucchini boats stuffed with mushroom a’la cheesesteak. Au gratin ALL the things. |
