I'm having leftovers. A "bean bake" I made following a Cooking the Books Youtube channel video recipe. It's bisquick, mixed with refried beens, salsa, and can of green chiles, topped with salsa and cheese and baked. Topped with sour cream, diced onion, and chopped tomato. It's good comfort food on a grey day like this.


Try this with cornbread batter. My kids love it.

Leftover grilled chicken roasted potatoes brussel spouts.

Our chef made Maple Butter Rosemary Roasted organic chicken, with roasted (probably the last batch of) carrots and eggplant from our garden, and mashed potatoes (also from our garden). Gravy made from the pan juices. Exquiste for a Tuesday night dinner.

We had make your own taco salads… the base was tomatoes, cukes, radishes, greens, corn - and the toppings were beefless crumbles, shredded cheddar, diced avocado, Greek yogurt, and salsa. Most of the veggies were from our CSA.

Whole wheat pasta with sautéed shrimp, zucchini and fresh mint. Not from my garden because I don’t have one. 😁

I put out lots of leftovers and everyone made up their own plates and heated them up in the microwave. It was a smorgasbord of:

Spaghetti noodles
Spaghetti sauce
Rice
Chicken divan
California Tamale Pie
Green beans

Grain bowls, make your own. Kids ate the barley, chickpeas and pecans. Adults added goat cheese, arugula, roasted root veggies, dried cranberries.

I made a puttanesca-style salmon bake that I saw on the Today show a few weeks ago. It was wonderful! Even dd, who rarely likes salmon, rated it an 8/10.

Making greek style wraps with falafel for me and chicken for the rest. Need to pick up tzaziki and baba ganoush. Since I have to go to the store will pick up fresh pillowy naan instead of using frozen. So the frozen stays put for another decade anything I'm missing?

No need to brag about your chef or garden. It makes you look desperate for people to admire you.

I did this and it was very good. I squeezed some lemon juice on the tuna at the end. Even my fussy son ate quite well.

I forgot how much spinach cooks down though. started with a huge bag and ended up with an amount about the size of a ping pong ball!
