You could do pulled pork loaded nachos and sandwiches. Use a crock pot or stove and slow cook the meat on Friday and Saturday, will be easy to use by Sunday. |

This is a better substitute for the ground beef you're trying to avoid. Chicken Tinga, or just chicken in red/green enchilada sauce, would make a great topping for nachos. Now I want green chile chicken nachos. What is it with this board and the nacho cravings lately?

OP here - I felt compelled to let everyone know how this worked out.
TLDR: OMG this was so affordable ($1.25 serving), but more importantly for me right now, easy (can all done @ the park under a portable shade canopy in less than an hour). It was met with rave reviews. First, let me say I live in Tucson and these people know and enjoy their meats. I usually bring pork carnitas or pulled pork, or smoked chicken, for our league family events and even though I just use ATK recipes, people think I'm some kind of a great cook. I only say this to confirm I'm not someone used to serving subpar meals to the masses.
I gave it a shot, experimenting at home first. I strained the broth, rinsed the meat and used my fingers to shred the chunks. I discarded all the congealed fat and about 1/2 of the fat pieces in the meat then dumped into instapot along with minced onion, powdered garlic, hatch green chilis, rotel, a little taco seasoning, oregano, cumin, lime juice and about a cup of juice from jalepeno slices. I pressure cooked for 8 minutes and quick released the pressure. The meat was a little soft, so the next time, I only cooked for 5 minutes. Then I left it all warming in the instant pot and let the flavors meld. People LOVED it. A big handful of nacho chips, 3 oz meat, about the same amount of nacho cheese, salsa & sour cream for $9 plate. Almost a $1000 in sales. It was gobbled up. True, people are tired and desperate for food while their kids are playing, but people really did comment on how tender and flavorful the meat was and it was a much greater hit than hot dogs and walking tacos. Tonight is costco pizza, though, so they can't all be gourmet meals. lol Thank you all for suggestions, I will 100% be trying something with the costco rotisserie meat at some point. Do I think it's as good as my carnitas or pulled pork? No, but I also don't really love beef. It was definitely better than the ground beef walking tacos. Was it cheaper than pork, again, probably no. But it was super simple, with very little prep time and virtually no clean up. I will absolutely do this again to mix up our menu. |
