I strained the broth, rinsed the meat and used my fingers to shred the chunks. I discarded all the congealed fat and about 1/2 of the fat pieces in the meat then dumped into instapot along with minced onion, powdered garlic, hatch green chilis, rotel, a little taco seasoning, oregano, cumin, lime juice and about a cup of juice from jalepeno slices. I pressure cooked for 8 minutes and quick released the pressure. The meat was a little soft, so the next time, I only cooked for 5 minutes. Then I left it all warming in the instant pot and let the flavors meld. People LOVED it. A big handful of nacho chips, 3 oz meat, about the same amount of nacho cheese, salsa & sour cream for $9 plate. Almost a $1000 in sales. It was gobbled up. True, people are tired and desperate for food while their kids are playing, but people really did comment on how tender and flavorful the meat was and it was a much greater hit than hot dogs and walking tacos. Tonight is costco pizza, though, so they can't all be gourmet meals. lol Thank you all for suggestions, I will 100% be trying something with the costco rotisserie meat at some point. Do I think it's as good as my carnitas or pulled pork? No, but I also don't really love beef. It was definitely better than the ground beef walking tacos. Was it cheaper than pork, again, probably no. But it was super simple, with very little prep time and virtually no clean up. I will absolutely do this again to mix up our menu. [/quote]
