We run a snackbar at the ballpark and our county food license limits us on food prep location/cooking on site. Long story short, we want to serve loaded nachos, and reviews say this is moist and tasty beef. I feel like we could do something with this, but I don't have a lot of time to experiment. What would you do? (I was thinking this can of meat, frozen pepper/onion mixture, a couple of cans of rotel and some mexican spices/taco seasoning into an instant pot for about 10 minutes, drain some liquid and shred. Layer onto tortilla chips, top w/melted cheese, sour cream and jalapenos.) What do you think? |

This is in broth and the taste won't likely match the taste of nachos.

Honestly that looks disgusting, OP.
Our snack bar buys chili in bulk from a local restaurant and freezes it and then defrosts it as needed for nachos. |
Also, the bonus with this is that the chili can also be put on hot dogs. |

You could do walking tacos -- trust me, they are a best seller at sporting events.
Can you have crockpots? We just have a couple of parents bring crockpots full of taco beef. Buy bulk single-serve packets of Fritos. Top with cheese, sour cream, salsa. Your idea sounds messy ... with walking tacos, the mess is contained in the bag. |
| I don’t think cubed meat will work well, if you can get ground meat and make a sloppy Joe you can serve chili dogs and meat on top of nachos. This meat looks too chunky for that. |
| Thanks everyone! We are hosting a tourney this week and want a different main course each night. We are having a walking tacos (with the taco ground beef) night, a pizza night, a chili dog (again, with ground beef chili) night, and are looking for a loaded nachos idea. We were sort of sickened by thinking of ground beef one more time, and thought this shredded might be good. I'll defer to the masses though, and stick to the known goods. Thanks everyone! |

| So…you’re not able to just cook ground beef off-site and use it in the recipe? I would be happy with meatless nachos in this scenario, but I wouldn’t call them “loaded”. I’m guessing some portion of your ballpark customers would be not pleased with a vegetarian nacho option. |
I can cook ground beef onsite, in our instant pot, but we were just trying to avoid 3 nights of ground beef. I like the idea of veg nacho, but I've already advertised a "loaded beef nacho". I also like the chicken idea, but not sure I'd feel like cooking/shredding the breasts there, so would likely also look to canned meat in that situation too. We're a temp set up snackbar, waiting for our new building, so our license is very limited right now. |
