Not picking on just your doctor, most of them are idiots about nutrition science - they don't even learn it in medical school, so unless they take up the hobby of learning nutritional biochemistry in their spare time (few of them do), they are as clueless as the average person and they give a lot of very bad advice - like the doctor who told me to avoid potatoes like they were the plague. I think there are too many people on here who really don't understand nutrition or basic science. The body will simply expel the excess vitamin K. That 1 lb bag cooked down is really not that much. You're fine, OP. I hate kale and only eat it raw mixed into a smoothie with fruit to cover up the taste. But enjoy! |

Chop kale fine Add ranch dressing and sriracha sauce, chopped grape tomatos, cooked farro or barley, some walnuts, and a fried egg. This is insanely good. I don’t usually like ranch dressing because it makes lettuce soggy but it’s perfect with kale. |
Put it in a soup. Reduces to nearly nothing. |
