Ok to eat 1 lb of kale a day?

I'm just about to vomit over eating kale of any amount. It's so bitter and gross.

Just switch up your greens. Go to organic markets and there are many to try

I think there are too many people on here who really don't understand nutrition or basic science. The body will simply expel the excess vitamin K. That 1 lb bag cooked down is really not that much. You're fine, OP. I hate kale and only eat it raw mixed into a smoothie with fruit to cover up the taste. But enjoy!


Actually vitamin K is fat-soluble, so your body stores it in fat tissue like vitamin D. It's not like vitamin C which is water soluble and can't be stored in the body. It does look like vitamin K toxicity is rare though and it is used, broken down, and expelled quickly. However, when writing that they probably don't anticipate a person ingesting such a high value daily. Everything in moderation OP.

That's too bad, bitter foods are some of the healthiest for you.

I like kale but not that much. Kale in high doses can be beneficial, see the Wahl diet for MS patients.
