Actually vitamin K is fat-soluble, so your body stores it in fat tissue like vitamin D. It's not like vitamin C which is water soluble and can't be stored in the body. It does look like vitamin K toxicity is rare though and it is used, broken down, and expelled quickly. I like kale but not that much. Kale in high doses can be beneficial, see the Wahl diet for MS patients. |
