Nachos! Plain tortilla chips and shredded cheese for a quick and easy version, or load em up with any number of toppings. I like black beans, avocado, and diced tomato.

What kind of cheese for the nachos?

Canned artichoke hearts (chopped) OR crab (picked over), mixed with 1 cup of mayo and 1cup grated Parmesan cheese. Mix it all together in small casserole dish or large ramekin.

Bake in 350 oven for 30 minutes . Great to spread on sliced baguette (or pumpernickel rounds, or tortilla chips).
