We have bagels, cream cheese, and lox once a week.
When it’s warmer, smoothies: plain whole milk yogurt, frozen berries or mango or whatever, ground flaxseed, some oats, and whatever lettuce mix I have. Plus a little honey. I vary the frozen fruit, sometimes use fresh fruit, sometimes add banana. Sometimes just add a banana and peanut butter, plus a bit of hazelnut butter to the yogurt. |
Quiche (I know it's still eggs, but it's a different style so might break up the routine.) Make ahead and pop a slice in the microwave for 15-30 seconds.

There’s no reason breakfast has to be “breakfast food”. Not all cultures have what we consider breakfast food for their first meal of the day. Even here, cold pizza is a much-cherished guilty pleasure for many. You might try them on sandwiches, cold or reheated leftovers, etc. |
breakfast burritos and you can easily vary the contents:
- classic egg, meat, cheese (you can sub shredded chicken or salmon for breakfast meats) - veggie scramble, sautee veggies like mushrooms, tomatos, peppers, spinach, onions (whatever you have), add cheese, wrap in burrito I make croissants and roll ham, scallions and shredded cheese into the middle. Bake them according to the roll wrapper. Store them. They can be eaten cold or reheated easily in a toaster oven. |

Greek yogurt with fruit and granola
I make breakfast burritos - I make a big batch and then freeze them and defrost/heat them in the morning. I put in a combination of eggs, sausage, beans, cheese or queso, cut up avocado, sour cream. They are a huge hit in my house. I also make breakfast sandwiches on light multigrain english muffins with scrambled eggs, cheese, and usually a meat. You could also look at high protein pancake mixes like Kodiak. |
I made homemade chorizo the other day and it was fantastic - just lean ground pork, vinegar and a bunch of Chile powder - made a great omelette. |
I make banana/oat pancakes on the weekend, freeze them, and then heat them up in the toaster oven and top them with peanut butter, greek yogurt, cacao nibs, and sometimes molasses. Eating pancakes for breakfast always feels indulgent, and these ones really are healthy.
there are a lot of recipes online for this. I make it with bananas, oatmeal (rolled uncooked), eggs, flax seed, cinnamon, salt, baking powder, a splash of oil, and milk or water. I also bake them because I'm lazy (425 in a sheet pan lined with parchment paper). |

We eat variations on this a lot, can vary meat to use plain ground turkey, beef or pork, can vary cheese, can add chopped veg. I often skip making cups, make night before, put in 8x8 pan, bake in am and cut into squares. Feta is really good in this too. To re-heat egg cups, put 2 on a plate, cover with a damp paper towel and microwave for 30 set at a time until hot. These freeze well and can defrost in fridge overnight and come to room temp on countertop. Also good for lunch/snack.

My kids sometimes like leftover homemade meatballs dipped in pesto, marinara, etc., leftover stir fry, etc. And having a bunch of hardboiled eggs is always handy, they can be briefly re-heated too. One other egg dish we eat a lot is shakshuka. I use Rao sauce as a base and add spices over the eggs. |
