Induction v. gas

You can boil water in an astonishingly short time with induction. I am the primary cook and I work FT, so anything that saves time in the process of weekday meal preparation is valuable to me.

Induction gets hot fast. It's harder to get very fine temp control. That usually not necessary for anything I do.

Our house has the 60+ yo GE elec range that was original to the house. We did replace a "Genuine Calrod" burner recently. Overall it works fine, 40" wide with a roomy oven and tons of storage. We'll go with induction if it ever dies. We'll probably move first, though; the damned thing is indestructible.

I was in your position OP! I knew little about induction and assumed it was in the middle of electric and gas performance-wise. But it’s so much better! It heats up super quick (water boils in about a minute) and gives me much more precise control over the heat. Also, I never have to worry about burning my hand or a dish towel when I place it on the hot stove by accident (like with electric) or spilt food catching fire (like with gas). And it is a breeze to clean. The learning curve is so small it’s practically nonexistent. Main thing is that there is no need to wait for a pan to “heat up” anymore.

We are planning a new build and my main kitchen requirement is an induction cooktop. I’m eyeing the Thermador Freedom— it looks amazing!

Not the PP but for me, the time spent cooking is so much shorter. For example, To make pasta, I’m able to boil the pasta in 1 minute. With electric, a large pot of water takes at least 15 min. On gas, it’s not much shorter.

I switched last year when we renovated. Had never used induction but was concerned about the air quality issues with gas. Am 100% on board with induction and wouldn't go back.

We had to replace all our pots/pans, and there was a learning curve, but it didn't take long to get comfortable. It's great. It's also very easy to keep the cooktop looking clean and new, which wasn't important to me when we switched but which I appreciate now.

The only thing I don’t like about my induction stove is that mine forces you to use certain size pans on certain burners. Most of the time this isn’t a problem but when cooking with several pots at a time it is really annoying.

The answer to this is the Thermador Freedom, I’ve had it for 5 years and it is the best ever. I’m a long time induction convert though (I’m from a country where they are much more common and much cheaper) so haven’t had gas for years. It seems a bit primitive now.

1. SO much easier to clean.

2. Modern safety features turn off burners after an hour. YMMV, based on which unit you get.

3. Faster than electric. Miles faster. Not as instant as gas, but still swift.

4. Basic safety. When we had gas, I was always checking to see if it was off. I’m just so much more relaxed around our induction stoves. We had a relative whose gas appliance leaked into their house. Fortunately, they had a carbon monoxide detector. Five years earlier, they would have simply never woken up.

I miss being able to flame/roast things over the burners (tortillas, peppers, etc.).

I'd still never go back to gas.

+1. It's just as responsive as gas and boils water in nothing flat. No visual cues - but trial and error after a few rounds of cooking and you know. No fumes. And there are now quality large-scale studies that show that gas cooktops contribute to asthma in children.

It's actually much simpler to quickly adjust the temperature and much more precise once figuring out the controls. Much better at maintaining a consistent truly low temp. You know that thing with gas where you're trying to get it as low as possible and the flame keeps going out? Those days are over.

Don't understand this one. It will heat your liquids to boiling way faster than gas.

I love it just because it is so easy to clean. Just spray and wipe. I was so sick of scrubbing the burner pans and grates after every meal. I don't have house cleaners like the rest of you so this is honestly the number one benefit. Cooking is pretty much the same with a few exceptions (hard boiled eggs require a new technique).
