Induction v. gas

Ditto those who had gas, switched to induction and I love it. We have the thermador freedom as well- it’s great. Yes I dry my hands to use the buttons if they are soaking wet. Not a big deal. It’s super. Wouldn’t hesitate to do induction. Ever.

I have a gas range (thinking of switching to induction) but I use my blow torch all the time. I sous vide a lot of finish with the blow torch. I’ve never used my burners to direct cook anything .

I do a lot of wok cooking, and have a gas range that allows me to use a round bottom wok without a wok ring. I would be hard pressed to give that up, though I know many people don't cook like that.

Although the ease of cleaning is tempting - ours is an open burner range, and cleaning is brutal.

Same. We converted to induction in one house and I really liked it. After selling that house and buying our second home, we had a gas range for a few months. That was when I realized how much I loved induction and we switched out the old gas range. The one thing we did differently when we bought our second induction range was opt for knobs over buttons.

Any recommendations for specific models? The Thermador freedom has been mentioned several times. I'm curious if there are other models recommended.

Can anyone comment on a hum or buzz that some people hear when they use an induction stove top? Some product reviews complain about this.

NP - ours occasionally does this, which can usually be remedied by moving the pan or pot slightly. It’s really not an issue.

We got ours 12 years ago when we moved into our current house. It’s a Samsung, not super high end but has served us incredibly well. I grew up with a gas stove, loved them for cooking, and will also never go back to gas. Induction is just as sensitive and with none of the downsides of gas. That it’s super easy to clean is icing on the cake.

It happens. When I used a gas stove I could always hear a hissing from the gas jets.

It's the electric hum you hear (at different volumes) around high powered electronics. Specifically, the transformers that are converting the AC current to the voltage for the pans. Different stoves make different amounts of sound, it's always louder at high power. It truly has never bothered me.

I was concerned about this because someone in my family is very sensitive to sound, but it hasn't been an issue. I sometimes hear a humming with a particular pancake griddle but it stops when I put the pancake batter on to cook.

I have gas at home but have found it easy to adjust to induction when staying in AirBnBs. Not sure what I'll do when my gas stove gives up the ghost but would be tempted.

We have a Wolf induction on order for our new kitchen. So glad to read all of these positive reviews for induction b/c we are leaving a gas range and took a leap of faith that it would be a good change. Have never cooked on one and look forward to it!
