We are renovating our kitchen soon. We had always assumed we would get a nice gas range top (we have gas now but it’s a cheap range). We have looked at induction and are torn about whether to get an induction cooktop instead of gas. We like that it’s easier to clean and that it’s more energy efficient and that it doesn’t have the same air quality concerns of gas. But we are kind of disappointed to not get gas as that is what we’ve always had and liked and we know that we would enjoy cooking with it. We are worried we won’t like induction and will be frustrated. But it seems like the right thing to do as states and cities are starting to ban gas in new builds.
We would get a high end induction cooktop if we switch. Have you switched to induction and did you grow to like it as much as gas? |

+1 the thing that was a happy surprise is that you have as much or more control over amount of heat as with gas. If anything, the burner controls are even more granular. And liquids boil really, really fast. |

It’s a very quick learning curve. Far better control of heat, faster heat, so easy to clean up. |

| Why do you think you would be frustrated? |
| We got a range with both. Certain things like sauces are better with gas where you can literally burn off alcohol. Other things like boiling are better on induction. We love having both. |

It seems harder to quickly adjust the temperature. I also like having the visual feedback with gas. |
