Help me use my bacon grease?

Add flour to it and you can use it as a thickener for clam chowder - just add milk, clams, potatoes, onions, and claim juice (and maybe more bacon).

lol - yep, same here. I was aghast when I first heard about bacon jars from my Southern DH, but I’m on board now. Makes a yummy grilled cheese sandwich. Mmmmm.

We always have a small container of bacon grease in the fridge. It’s usually my answer to “crap, this recipe is supposed to have bacon and we don’t have any / didn’t defrost any / am too lazy to deal with real bacon

Sauté the chopped veggies you add to your bean soup.

I keep it in the freezer. Like others, I might use it to season greens, beans, and other vegetables, substitute for some of the fat in corn bread, use it to grease the pan for omelettes, frittatas and savory pancakes or fritters. I rarely fry food, but you can also substitute it for some of the fat to add flavor. You can also use it for basting meat.

I grew up with a bacon grease jar too-grandma was from GA. I’m lazy and tend to buy the pre-cooked bacon from Costco these days, but when I fry up actual bacon, that grease is being saved. We use it for frying/scrambling eggs and flavoring veggies like green beans, potatoes, etc. We eat a lot of eggs here so that’s probably where it gets used mostly.

This. I don’t consider it wasteful to throw out something that is terrible for your health.

Saturday morning, I consumed the only piece of bacon I'll probably eat all year.

Yes, I'm thrifty and yes, I'm taking the opportunity to enjoy the boatload of vegetables I typically eat prepared with something other than my usual EVOO.

Considering I'm 5'3" and 110lbs. with low blood pressure and low cholesterol, this feels 100% logical to me in my one wild and precious life.

I don’t like greasy vegetables, so that would be a no for me.

I think I would use it to make some skillet cornbread, or fried eggs

I use bacon fat to cook potato wedges in a cast iron. I start with a high heat to get a crispy outside then turn down the heat to let cook inside.

NYT uses bacon grease for a bacon fat ginger snap cookie by Julia Moskin. It’s delicious.
