I love to roast or sautee cabbage (green, red, both) with lots of onions, some carrots, and some apples in olive oil with balsamic glaze (or red wine vinegar and maple syrup - they key is vinegar + sugar...I love vingear). Lots of salt. So delicious! Especially with mashed potatoes or pierogies.

I toss cabbage into my smoothies, along with spinach. It’s a great vegetable with its standing as cruciferous.

I read that you should be careful about how much cabbage you consume if you have a thyroid condition. I cut way back, but do live cole slaw!

Add raw cabbage, green or purple, to a regular salad. It's a great way to get more cabbage into your diet and add crunch factor to the salad.
