I made this Hungarian mushroom soup today. Oh my, it's delicious! I doubled all the spices except dill weed. I didn't have mushroom powder so I used the Trader Joe's Umami seasoning and tripled it. I didn't have salted butter so I just added some salt at the end. I left out the fresh parsley and lemon juice because I didn't have them.

What a delicious way to turn rotisserie chicken into chicken noodle soup? -chicken -celery -onion? -carrot -broth (I use better than broth because it’s what I keep on hand) -wife egg noodles -salt and pepper What else? And how much of each? I’m going to the store or pick up chicken and the egg noodles. Anyone want to help? |

A splash of lemon juice or white wine. What I do is serve the chicken one night and boil the carcass for broth, then make the soup with whatever meat is left over. |
I love adding some fresh ginger to mine, if you're ok with deviation from the classic flavor just a bit. |

It's a great day for soup! I just put a beef stew in the crockpot and I have crusty garlic bread to go with it. And I'll have a glass (or two) of the wine I opened to use in the stew. I can't wait for dinner tonight! |
I cook a lot of different soups, we eat soup almost daily and these two are probably my favourites:
1) Icelandic salmon soup (I never use whey) https://bit.ly/3qZpGyF 2) And borscht (yes, I am Ukrainian )) I flipped through about 20 recipes and the one below is the closest to how I cook it. I use 2 beets instead of 3, and 4 potatoes instead of 3. Also, I usually add 1/4 of shredded green cabbage, it's more authentic this way but you can leave it out. Skip step 4 altogether, adding the tomato sauce to your beets while they are simmering.
